Antipasto ~ First Course Appetizer

Because my Blog is a beginning of something new, I thought this recipe would be appropriate.
Antipasto, in Italy, is the beginning of the meal, it awakens your palate
to what will follow......... Enjoy

Pick out the size dish you would like to serve on, this helps in determing placement and use.
Be creative and use what you have on hand in your cupboard and refrigerator. Use however much you want and have fun with colors.
Ideas for Ingredients:

I always lay some curly lettuce down on the serving plate.This holds everything in place and fills empty spots with color.
Hard Boiled Eggs (cooled and cut in half)
Tuna white albacore packed in water (drained)
Jar of Roasted Red Peppers (drained)
Can of Anchovies Rolled with capers (drained)
Pitted Olives (any kind)
Salami- sliced thin and rolled up (soppressata,genoa)
Prosciutto-sliced thin and rolled up
Can of Artichoke Hearts (drained)
Jar of Mushrooms packed in olive oil (drained)
Variety of Cheeses-sliced in 1/2 x 2" strips (asiago,provolone, cheddar, etc)
Jar of Pepperoncini Peppers-(drained)
Seedless Cucumber-thinly sliced
Baby carrots
Cherry Tomatoes
Drizzle lightly with olive oil
Mangiare e godere
Eat and Enjoy

In the beginning...


Well here I am with my very first post on my new Blog
 and I couldn't be happier.
The reason I'm here is because of the beautiful people in the picture
 my father Al and mother Toni.
They managed to raise 6 children with laughter, music, faith
 and a lot of pasta.
Thank you Mama and Papa for everything...
